Game butcher building on export boom

A Highland butcher said yesterday it expected rising exports to help it nearly treble turnover this year.

Great Glen Game, which specialises in charcuterie products such as venison salami, chorizo and bresaola, already sends its products to Europe but has attracted interest from across the world in recent months.

Husband-and-wife team Anja and Jan Baak, who own the business at Roy Bridge, Lochaber, predicted turnover would rise from £120,000 to £350,000 this year.
