Cheese delights

Celebrity chef Brian Turner has joined forces with Cathedral City to create some exciting new recipes using tasty mature cheese, such as this quick and delicious salmon dish

Salmon Escalope with Apple, Cheese and a Chilli Coriander Salsa

Serves four.

4 thin slices of fresh salmon

1 teaspoon olive oil

30g butter

1 Granny Smith apple

115g Cathedral City Mature cheese

12 scallops

Salsa

1 red chilli

1 tablespoon chopped fresh coriander

2 tablespoons olive oil

Juice of half lemon

Salt and pepper

Trim the salmon slices to even-sized escalopes.

Heat the olive oil in a pan and then add butter. Put the salmon into the pan and quickly colour. Carefully turn over, seal and take out of the pan and keep warm. Sear and cook the scallops in same pan.

Meanwhile, cut the apple and Cathedral City Mature cheese into fine dice and mix together in a bowl.

Finely chop the chilli, add the coriander, olive oil and lemon juice and season. Mix the salsa with the cheese and apple.

Put the salmon on a plate, decorate with scallops and warm in the oven. Put the salsa on top and serve.
