Celebrate culinary coup for Inverness

WITH the economic downturn squeezing the life out of some industries, it is right to celebrate ambition when it can be found.

In Inverness the internationally-renowned chef, Albert Roux, is to open his first restaurant in Scotland. He plans to take over the kitchens of the city’s Rocpool Reserve Hotel.

This is an ambitious move by the hotel’s owners and a leap of faith by Mr Roux who clearly sees potential in Inverness over Glasgow and Edinburgh which would, perhaps, be expected to attract a legendary chef.

The city is growing a reputation for fine dining and the hotel and restaurant industry, while not without its problems, has worked hard to put Inverness on the culinary map. In the current climate, any new venture is a risky proposition but if business owners were to curb their ambition, recovery and growth would be a long time coming. Mr Roux and his team have a challenge to make their concept work in Inverness but it is also up to tourists and the local population to support the venture, and others, to ensure that the city’s restaurant industry continues to prosper.
